As a small family farm, we take pride in raising high-quality beef with care and intention. Our cattle are grass-fed and grain-finished to ensure excellent flavor and tenderness. All of our beef is born and raised right here on our farm, where we focus on animal health, responsible stewardship, and stress-free handling. When ready, our beef is processed at a trusted local meat market, allowing us to maintain transparency and quality from pasture to plate. How do you raise your beef?
Our cattle are raised on pasture alongside their mothers until weaning. After weaning, they are given free choice of grass hay and grain to ensure excellent flavor and tenderness.
How much meat will I take home from the meat market?
The amount of meat you take home depends on the animal’s hanging weight and your chosen cuts. On average, you can expect about 60–65% of the hanging weight as packaged beef. Your final yield may vary slightly based on cutting preferences, bone-in vs. boneless options, and the level of trimming you select.
What is hanging weight?
Hanging weight is the weight of the beef after harvest, once the hide, head, and internal organs are removed, but before the meat is cut and packaged. It’s the weight used to price custom beef orders and is typically about 60–65% of the live animal’s weight.
What is a split quarter?
All quarter beef orders are split quarters, meaning each quarter of beef is made up of half a front quarter and half a hind quarter, giving you a balanced mix of steaks, roasts, and ground beef.
What is tallow?
Do you render your own tallow?
Yes! We render all of our own tallow in-house using fat trimmings and suet from the beef we raise, ensuring quality, care, and consistency in every product.
How do I store my tallow products?
Tallow products should be stored in a cool, dry place away from direct sunlight and heat. Properly rendered tallow is shelf-stable and does not require refrigeration, but storing it in cooler conditions can help extend freshness and preserve quality. Always use clean, dry hands or utensils when scooping to keep the product at its best.
Do you offer delivery or shipping?
At this time, we offer local pickup only for all tallow products. Orders are picked up in Hutchinson, Minnesota, and we will contact you to schedule a convenient pickup time and provide the address. All beef orders must be picked up directly from the local meat market.
